Gluten free banana blueberry bread
Makes 1 Loaf
What you need
2 cups gluten free all-purpose flour
4-5 very ripe bananas, mashed
1/2 cup sugar
1/2 cup softened butter or coconut oil
2 tablespoons coconut milk
4 scoops Qt Bellē or Beaū powder
1/2 tsp vanilla
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup frozen blueberries
- Preheat oven to 180˚C and lightly grease or line a small-medium loaf pan.
- In a large bowl, cream together the butter and sugar. Stir in the eggs, coconut milk, mashed banana until well combined. Add the Qt powder, flour and rest of ingredients apart from blueberries.
- Once mixed, fold blueberries through.
- Transfer to loaf pan and bake for approximately 45-50 minutes until a toothpick comes out clean. Allow to cool completely before slicing.
