Coconut chia pudding

What you need

1/4 cup chia seeds
1 cup coconut milk (extra plant based milk if you need)
1 tbsp honey or agave nectar
1/4 tsp cinnamon
1/4 tsp vanilla
1 scoop Qt Bellē or Beaū powder

To serve

Granola of your choice
Sliced strawberry
Nut butter of your choice

Instructions

  1. Whisk chia, coconut milk, honey, cinnamon, vanilla and Qt powder in a small bowl. Allow to sit for a few minutes, then whisk again to prevent any clumping. Follow this procedure a few times until the chia has absorbed most of the liquid. Set aside in the fridge for 1 hour or overnight, adding more liquid if necessary.
  2. To serve, line a jar with strawberry slices then layer the chia pudding with your favourite granola. Top with nut butter and more sliced strawberry.
